Ingredients
  • 1/2 cup zucchini shredded
  • 1/3 cups applesauce
  • 1 cup water 1 cup + 2 tbs
  • 2 tsp pure vanilla extract
  • 3 tbs flax meal
  • 1/2 cup vegetable oil 1 cup + 2 tbs
  • 3/4 cup cocoa powder
  • 1 cup coconut flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup splenda or Stevia
  • 1/2 cup mini chocolate chips optional

  1. Preheat oven to 350F, and line a 9×13 baking dish with parchment paper. Set aside
  2. In a large mixing bowl, whisk together the first 6 ingredients and let sit at least 5 minutes. (Tip: shred zucchini in a food processor for fine shreds.)
  3. Combine all other ingredients in a separate bowl, and stir very well. Pour wet into dry, stir until evenly mixed, then pour into the baking dish.
  4. Using a full sheet of parchment or wax paper, press down very firmly until the brownie batter evenly covers the pan.
  5. Bake 19-20 minutes, then pat down hard with a pancake spatula or another sheet of parchment. (If still undercooked, it’s fine. Just fridge overnight and they’ll firm up!)
  6. Let zucchini brownies sit 15 minutes before trying to cut into squares, and if at all possible wait until the next day to eat them. They will be twice as flavorful!

  1. Preheat oven to 350 degrees F.
  2. Whisk together dry cookie ingredients in a small mixing bowl.
  3. Add wet ingredients, and mix until a dough forms.
  4. Line a baking sheet with parchment paper or lightly spray with cooking spray.
  5. Form balls of dough with a tablespoon and place 2" apart on sheet.
  6. Press balls flat to roughly half an inch thick using the back of a spatula or your hand.
  7. Bake for 8-10 minutes until edges are firm but center is still soft (cookies will set upon cooling). I flattened mine a little more fresh out of the oven with the back of a spatula.
  8. While cookies cool, combine frosting ingredients in a separate mixing bowl until smooth.
  9. pread frosting over cookies and decorate with sprinkles if desired. Enjoy!
  10. Note: You may need to adjust water (3 tbsp) depending on the kind of protein powder you use.

  3. Beat eggs until light. Gradually beat in Splenda until fluffy.

  1. Place 1/2 cup water in a 1-cup liquid measure. Microwave at HIGH 2 to 3 minutes or until water boils; pour water over fig mixture. Add coconut, margarine, and sweetener to fig mixture, stirring well. Microwave, uncovered, at HIGH 2 to 3 minutes or until mixture is thickened, stirring after every minute. Add oats and vanilla, stirring until oats are moistened. Proceed with recipe as directed.
