  • 80 g vanilla whey protein powder
  • 6 tbs coconut flour
  • 1/4 cup Pyure Organic Stevia blend
  • 1/4 tsp salt
  • 1/4 tsp baking soda

  • 1 tbs sugar free maple syrup
  • 1/2 tsp Vanilla extract

  • 1/2 cup powdered Stevia
  • 1 tbs tapioca flour
  • 2 tbs unsweetened almond milk
  • 1 tbs Smart Balance light buttery spread

Instructions
  1. Preheat oven to 350 degrees F.
  2. Whisk together dry cookie ingredients in a small mixing bowl.
  3. Add wet ingredients, and mix until a dough forms.
  4. Line a baking sheet with parchment paper or lightly spray with cooking spray.
  5. Form balls of dough with a tablespoon and place 2" apart on sheet.
  6. Press balls flat to roughly half an inch thick using the back of a spatula or your hand.
  7. Bake for 8-10 minutes until edges are firm but center is still soft (cookies will set upon cooling). I flattened mine a little more fresh out of the oven with the back of a spatula.
  8. While cookies cool, combine frosting ingredients in a separate mixing bowl until smooth.
  9. pread frosting over cookies and decorate with sprinkles if desired. Enjoy!
  10. Note: You may need to adjust water (3 tbsp) depending on the kind of protein powder you use.

  1. Preheat oven to 350°F
  2. Melt chocolate and butter over VERY low heat. Then let cool for 10 minutes.
  3. Beat eggs until light. Gradually beat in Splenda until fluffy.
  4. LOWLY drizzle chocolate mixture into egg mixture, beating constantly.
  5. Beat in sifted Cocoa until smooth.(Mixture will get VERY thick)
  6. Spread batter into a GREASED 12x16 jelly roll pan.
  7. Bake for 50 minutes, or until top is puffed and cracked and tester comes Out with MOIST crumbs attached.
  8. Cool for 1 hour. Cut into 2 inch squares.

Add coconut, margarine, and sweetener to fig mixture, stirring well. Microwave, uncovered, at HIGH 2 to 3 minutes or until mixture is thickened, stirring after every minute. Add oats and vanilla, stirring until oats are moistened. Proceed with recipe as directed.

  2. In a large bowl stir together all-purpose flour, whole wheat flour, baking powder, pumpkin pie spice, baking soda, and salt. Make a well in the center of the flour mixture; set aside.
  3. In a medium bowl combine pumpkin, mashed banana, Splenda, coconut milk, egg, and oil. Add pumpkin mixture all at once to flour mixture; stir just until moistened (batter should be lumpy). Spoon batter into prepared muffin pan. Sprinkle with walnuts.
  4. Bake for 15 to 20 minutes or until a toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Makes 12 servings
