
Birria Tacos
Ingredients
- 2.25 lbs chuck roast trimmed of visible fat
- 8 oz sliced pepperoncini with juice
- 1 medium yellow onion sliced
- 1 pkg Au Jus
- 1 pkg Kinder's Carne Asada seasoning
- 1 can beef broth
- 8 medium low carb tortillas
- 1 1/2 cup 2% Mexican Blend Shredded Cheese
Optional Toppings (NOT included in nutrition information!)
- lettuce shredded
- tomato diced
- salsa
- light sour cream
- fresh avocado
Instructions
- Use a slow cooker liner in crockpot for easy clean up
- Place roast, pepperoncini with juice, onion, au jus mix, carne asada seasoning and beef broth in crock pot. Cook on HIGH for 4 hours or LOW for 6-8 hours
- Remove roast and place on cutting board to shred. Use a slotted spoon to remove pepperoncini and onion from the crock pot and mix into meat. Reserve juice in crockpot
- Dip tortilla in remaining juices, fill with meat mixture and top with 1/4 cup cheese. Grill in pan until both sides are golden brown.
- Serve with additional toppings if desired
