
Chili-Lime Chicken & Shrimp Kabobs
Ingredients
- 3 Tbsp olive oil
- 1 1/2 Tbsp red wine vinegar
- 1 lime juiced
- 1 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 2 garlic cloves crushed
- cayenne pepper (to taste)
- salt and freshly ground black pepper (to taste)
- 1 pound chicken breast skinless,boneless, halved into 1 1/2 inch pieces
- OR YOU CAN USE
- 1 pound large shrimp peeled and deveined
- colored bell peppers, zucchini,onions,cherry tomatoes etc.. cubed
Instructions
- In small bowl, whisk together olive oil, vinegar and lime juice. Season with chili powder, paprika, onion powder, crushed garlic, cayenne pepper, salt and black pepper.
- Place chicken and/or shrimp in shallow dish with sauce and stir to coat. Cover and marinate in refrigerator for at least 1 hour. Preheat grill to medium-high heat. Thread chicken and/or shrimp onto skewers, alternating with veggies of choice. Discard marinade. Lightly oil the grill. Grill skewers for 10-15 minutes
