
Creamy Shrimp Pasta
Ingredients
- 8 ounces fettucine
- 1 pound medium shrimp fresh or frozen
- 1 8-ounce package Neufchatel reduced-fat cream cheese
- 1 cup chicken broth
- 5 ounces frozen spinach thawed and excess moisture removed
- 1 cup Parmesan cheese grated
- 2 cloves garlic
- salt & pepper to taste
Instructions
- Cook fettuccine as directed on package
- Meanwhile, heat large skillet or pat to medium-high heat
- Add cream cheese and chicken broth, cook, stir 3-4 minutes until cream cheese is melted and mixture is blended well
- Add Parmesan cheese, garlic and salt & pepper to taste
- Add shrimp and stir until cooked through
- Add spinach and stir well
- Drain pasta; place in a large bowl and stir in shrimp mixture
- Optional: Toss in 2 medium tomatoes for taste and color!
