  • 8 ounces fettucine
  • 1 pound medium shrimp fresh or frozen
  • 1 8-ounce package Neufchatel reduced-fat cream cheese
  • 1 cup chicken broth
  • 5 ounces frozen spinach thawed and excess moisture removed
  • 1 cup Parmesan cheese grated
  • 2 cloves garlic
  • salt & pepper to taste


  • Cook fettuccine as directed on package
  • Meanwhile, heat large skillet or pat to medium-high heat
  • Add cream cheese and chicken broth, cook, stir 3-4 minutes until cream cheese is melted and mixture is blended well
  • Add Parmesan cheese, garlic and salt & pepper to taste
  • Add shrimp and stir until cooked through
  • Add spinach and stir well
  • Drain pasta; place in a large bowl and stir in shrimp mixture
  • Optional: Toss in 2 medium tomatoes for taste and color!
