
Phyllo Apple Strudel
Ingredients
Filling
- 4 small apples
- 2 tbs butter melted
- 1 tsp vanilla
- 1 tbs cornstarch
- 1 tsp cinnamon
- 2 tsp orange zest
- 1/4 cup Splenda or Stevia
Strudel
- 12 sheets phyllo dough thawed
- 4 tbs butter melted
- 2 tbs sugar
- 1 tsp cinnamon
- 2 tbs chopped pecans or walnuts if desired
Instructions
- Peel, core and dice apples.
- In a medium microwave-safe bowl, add apples, butter, vanilla, cornstarch, cinnamon, orange zest, and Splenda. Mix together thoroughly and microwave for about 5 minutes or until the apples are tender and mixture thickens.
- Remove phyllo dough from package and have a damp towel ready so you can keep the phyllo sheets covered as you work (they tend to dry out very quickly)
- Place a phyllo sheet on a large cutting board. On one edge, add about 3 TBS of apple filling. Fold phyllo into thirds over the filling. Fold phyllo in the form of a triangle, just like you would fold a flag.
- Place on a cookie sheet. Brush the outside of the triangle with butter. Sprinkle with cinnamon & sugar mixture and top with chopped pecans.
- Bake at 375*F for 12-15 minutes or until nicely golden brown
