
Quick & Easy Thai Green Curry Chicken
Ingredients
- 2 cups zucchini sliced in half lengthwise and cut into small pieces
- 1 cup bell pepper cut into thin strips
- 1 cup mushrooms quartered
- 42 oz rotisserie chicken breast meat (or cooked chicken breast) cut into bite sized pieces
- 2 jars Thai Kitchen Green (or Red) Curry Paste
- 2 cans lite coconut milk
- non-stick cooking spray
- salt and pepper to taste
Instructions
- Mix together curry paste and coconut milk in small bowl, set aside
- Heat a large skillet on medium high, spray with non-stick cooking spray, Stir fry vegetables until crisp tender
- Add rotisserie chicken to skillet and reduce heat to medium low, pour curry mixture over chicken and vegetables and simmer 4-5 minutes
- Serve over cooked Jasmine, Basmati or Brown Rice*
