Quick & Easy Thai Green Curry Chicken

Ingredients
  

  • 2 cups zucchini sliced in half lengthwise and cut into small pieces
  • 1 cup bell pepper cut into thin strips
  • 1 cup mushrooms quartered
  • 42 oz rotisserie chicken breast meat (or cooked chicken breast) cut into bite sized pieces
  • 2 jars Thai Kitchen Green (or Red) Curry Paste
  • 2 cans lite coconut milk
  • non-stick cooking spray
  • salt and pepper to taste

Instructions
 

  • Mix together curry paste and coconut milk in small bowl, set aside
  • Heat a large skillet on medium high, spray with non-stick cooking spray, Stir fry vegetables until crisp tender
  • Add rotisserie chicken to skillet and reduce heat to medium low, pour curry mixture over chicken and vegetables and simmer 4-5 minutes
  • Serve over cooked Jasmine, Basmati or Brown Rice*
