  • 1 cup oat flour
  • 2 scoops Quest Salted Caramel whey protein
  • 1/2 tsp baking soda
  • 1/2 cup unsweetened flaked coconut
  • 1/2 cup light ricotta cheese
  • 1/2 cup unsweetened apple sauce
  • 1/2 cup egg whites
  • 1 tsp coconut extract
  • 1/2 cup Splenda or Stevia
  • 4 ounces water


  • Preheat oven to 350 degrees
  • Mix oat flour, whey protein, baking soda and coconut in large bowl
  • Mix ricotta, applesauce, egg whites, coconut extract, Splenda and water in a bowl
  • Add wet ingredients to dry ingredients and mix together
  • Spray 8x8 glass pyrex dish with non-stick butter spray
  • Pour ingredients into dish
  • Bake 20-22 minutes
