
Salted Caramel Coconut Protein Bars
Ingredients
- 1 cup oat flour
- 2 scoops Quest Salted Caramel whey protein
- 1/2 tsp baking soda
- 1/2 cup unsweetened flaked coconut
- 1/2 cup light ricotta cheese
- 1/2 cup unsweetened apple sauce
- 1/2 cup egg whites
- 1 tsp coconut extract
- 1/2 cup Splenda or Stevia
- 4 ounces water
Instructions
- Preheat oven to 350 degrees
- Mix oat flour, whey protein, baking soda and coconut in large bowl
- Mix ricotta, applesauce, egg whites, coconut extract, Splenda and water in a bowl
- Add wet ingredients to dry ingredients and mix together
- Spray 8x8 glass pyrex dish with non-stick butter spray
- Pour ingredients into dish
- Bake 20-22 minutes
