Spinach, Feta & Egg White Wrap
- 1 cup 100% egg whites
- 3 large eggs
- 10 oz frozen chopped spinach thawed and drained
- 6 oz fat free feta
- 4 mission carb balance tortillas
- 1 tsp salt
- 1/2 tsp pepper
- Spray a large nonstick skillet with cooking spray. Mix eggs and egg whites in a small bowl. Over medium heat, cook the eggs in the pan until almost cooked through. Add the spinach and feta cheese in the last minute of cooking, along with salt and pepper to taste. Turn off heat.
- Warm tortillas in the microwave for 30 seconds, and divide egg mixture between the four wraps. If desired, place the wraps back into the pan and toast the outside of the wrap over medium low heat for about 1 minute on each side, or until toasted. (Or you could toast it up in a panini gr
