  • 1/2 cup broccoli finely diced
  • 1/2 cup quinoa cooked according to package directions
  • 4 cups shelled edamame cooked and cooled
  • 1/2 small red onion diced
  • 1/4 cup carrots grated
  • handful fresh cilantro chopped
  • 1/4 cup green onions chopped
  • 2 tbs peanuts chopped


  • 1 large lime zested and juiced
  • 1 tsp sesame seeds
  • 1 tbs soy sauce
  • 1 tbs sesame oil
  • 1 tbs rice vinegar
  • 2 cloves garlic minced
  • 1 inch piece ginger minced


  • In a large bowl toss cooked quinoa, edamame, broccoli, red onion, carrots, cilantro, green onions and peanuts together. Mix until combined.
  • In a small bowl combine dressing ingredients.
  • Pour dressing over quinoa and mix until combined.
