
Thai Veggie Quinoa Bowls
Ingredients
- 1/2 cup broccoli finely diced
- 1/2 cup quinoa cooked according to package directions
- 4 cups shelled edamame cooked and cooled
- 1/2 small red onion diced
- 1/4 cup carrots grated
- handful fresh cilantro chopped
- 1/4 cup green onions chopped
- 2 tbs peanuts chopped
Dressing
- 1 large lime zested and juiced
- 1 tsp sesame seeds
- 1 tbs soy sauce
- 1 tbs sesame oil
- 1 tbs rice vinegar
- 2 cloves garlic minced
- 1 inch piece ginger minced
Instructions
- In a large bowl toss cooked quinoa, edamame, broccoli, red onion, carrots, cilantro, green onions and peanuts together. Mix until combined.
- In a small bowl combine dressing ingredients.
- Pour dressing over quinoa and mix until combined.
