  • 3/4 cup Greek Yogurt
  • 1 egg (or 2 egg whites)
  • 1/2 cup whole wheat pastry flour (..if you'd like to add protein powder..see thoughts/notes above)
  • 1 tsp baking soda


  • Combine the Greek yogurt, egg, (**or egg whites) until creamy
  • In a separate bowl, combine the flour and baking soda
  • Mix the wet with the dry and stir until the batter is just combined. Let it rest for 10 minutes
  • Cook the pancakes as you would any other
